| Enough marinade for 4 pieces of fish
- 4 servings of EcoFish Mahi Mahi, thawed
- 4 tbsp. sliced shallot or red onion
- 2 tbsp. minced garlic
- 2 tbsp. minced ginger
- 1 tbsp. ground coriander seed
- 1 tsp. paprika
- 1 tsp. Chili powder
- 1/4 tsp. Cayenne
- 2 tsp. Fresh lime juice
- 1 tbsp. Soy sauce
- 1/2 tsp. Kosher salt
- 1/2 tsp. Sugar
- 1 tbsp. Vegetable oil
- 1 tsp. Dark sesame oil
1. Combine all of the ingredients except the fish in the bowl of a food processor or blender.
2. Blend to combine and form a paste.
3. Use about 1-2 tbsp of paste per piece of fish. Rub all over the fish and marinate in the refrigerator for at least 15 minutes. Reserve extra marinade for future use in a tightly covered container in the refrigerator.
4. Grill or pan-fry the fish to desired doneness. Serve with steamed rice, stir-fried asian greens.
Note: feel free to substitute EcoFish Albacore tuna or Coho Salmon in this recipe, they'll taste just as good!
