MahiMahi with Indonesian Sate Rub

Enough marinade for 4 pieces of fish

  • 4 servings of EcoFish Mahi Mahi, thawed
  • 4 tbsp. sliced shallot or red onion
  • 2 tbsp. minced garlic
  • 2 tbsp. minced ginger
  • 1 tbsp. ground coriander seed
  • 1 tsp. paprika
  • 1 tsp. Chili powder
  • 1/4 tsp. Cayenne
  • 2 tsp. Fresh lime juice
  • 1 tbsp. Soy sauce
  • 1/2 tsp. Kosher salt
  • 1/2 tsp. Sugar
  • 1 tbsp. Vegetable oil
  • 1 tsp. Dark sesame oil
1. Combine all of the ingredients except the fish in the bowl of a food processor or blender.
2. Blend to combine and form a paste.
3. Use about 1-2 tbsp of paste per piece of fish. Rub all over the fish and marinate in the refrigerator for at least 15 minutes. Reserve extra marinade for future use in a tightly covered container in the refrigerator.
4. Grill or pan-fry the fish to desired doneness. Serve with steamed rice, stir-fried asian greens.
Note: feel free to substitute EcoFish Albacore tuna or Coho Salmon in this recipe, they'll taste just as good!
